Either by selecting "Modern Web Client" from the arrow down menu next to the account name in the top right corner of the interface (non-persistent way) or by changing 'Default Web App' in user's preferences from Classic to Modern (persistent change). But neither of these choices are available in Modern UI to allow a user to switch back either temporarily or definitively to Classic UI. I've seen this post here [1] where Mark says it's possible. Do I need to set something in the COS to allow this? I didn't expect a Zimlet to handle this and as ZCS 10 zimlets were not enabled in existing COS during ZCS 10 upgrade. We had to create a new COS with our own customizations to work around this.
