Yup, as David and Stefan have pointed out, they add their own repo and the updates/patches are all done through that (it's still a single big omnibus package that installs lots of programs). I've been using (very lightly) gitlab-ce since 2014. It does its own backup as part of the package upgrade and puts in notes about config defaults and changes that might have been changed from the update. We've also got another VM with gitlab-runner for CI (although I don't think it has been used for a while) that is updated the same.
