In the inbound Zimbra server-side filters there is criteria available that looks for calendar invites, which could be combined with an additional criteria in the same filter that looks for a particular sender (organizer's) email address. However, I don't recall seeing a filter action available that would auto accept invites. With some creative use, perhaps you could setup a filter that looks for calendar invites from a particular organizer, then forward it to a Zimbra resource account that's configured to auto accept calendar invites.

I know there is an option to accept everything, but that is to broad: 
`Automatically add received appointments to calendar`
